DIY SOMMELIER WITH FRANTOIO BONAMINI

Do you need to be a professional taster in order to tell apart a good olive oil from another? Of course not!

Following these simple rules you will be able to tell if an evoo is good or not in a blink of an eye.

First step: get yourself a glass (did you know that they have to use a blu glass during professional tastings?) and an apple, to help eliminate the sensations between one and the other.

Second step – Visual perception: starting from the assumption that visual judgment is not an important parameter, but thanks to it you can indentify the strenghts and the weaknesses of the oil.
Pour the oil into the glass, trying to focus your attention on its fluidity while you are pouring it, shaking it, always keeping the glass against the light. The oil has to have medium-low fluidity level and a green/yellow color, which identifies a young or mature harvest of the olives.

Third step – Olfactory perception: just from smelling the olive oil you could already judge your product. Aromas like fruits, vegetables or grass will be more than enough to clear your mind; on the other hand smells like rancid, mold or dirt should ring a bell.
Here all the instructions to get through this third step à warm up the glass covering the top and the bottom (for better keeping all the aromas), slightly shaking the glass; remove your hand on the top and just smell the oil trying to intercept all its components (repeat this 2/3 times).

Forth step – Tasting perception: with the main goal of training your taste buds take a sip of olive oil and spread it on the surface of your tongue, roteating it. Vaporize the oil, sucking in some air through your lips and teeth, keeping your tongue laid on your palate. This test indentifies some important features such as bitter, sweet, spicy which are qualities, but also negative attributes like mold, rancid or worm.
